the French have an elaborate method of cooking the eggs in low heat over a water bath with super soft curds, the American way is quick and dirty over high heat making large curtains of egg
I prefer medium curds over medium heat - best of both worlds!
@amir @pareinoia @TetraspaceGrouping you can also toss in some vegetables, meat, cheese, and/or spices
i prefer spinach+cheddar+garam masala myself, but there are other ways to do it
