Speaking of distilling water ... we actually waste LOTS of distilled water.
I was reading about water injection into car engines, and a problem is that most drivers don't care to deal with the bother of refilling the water tank with distilled water (usually mixed in with methanol because if you're buying this stuff why not).
So they're working on a water injection system which refills itself with distilled water condensed on the air conditioning system.

I think the "problem" is that it's too easy to purify the water on the fly. Here on Earth, ambient 1atm pressure makes it energy intensive to distill water.
Out in space, ambient pressure is very low, meaning all you need to do to distill stored water is to release some of it into a chamber and to use the condensed pure water.
At low pressure, this water is boiled by waste heat.
